Trends in New Cuts of Steaks

According to the yearly survey conducted by the National Restaurant Association, it has been determined that the top trending foods of the year 2018 will involve new cuts of meat. Over 600 professional chefs and members of the American Culinary Federation or ACF have come together to come up with a list of the most trending beverages and food that will be most talked about this year. They’ve also listed the top new trends in cuts of meat which include Oyster Steak, shoulder tender, Merlot cut and Vegas strip steak.

Oyster Steak

Oyster Steak is a small piece of meat that is cut above the backbone. It weighs 6-8 ounces. It is a soft piece of meat. Its water content is high and is best cooked in a high amount of heat.

Methods used in cooking oyster steak include grilling, pan searing and boiling. You can enjoy your oyster steak with toppings of sautéed onions, steak sauce, or mushrooms. For a balanced diet, you can accompany the steak with baked potatoes, rice, salad, or vegetables.

Some of the items you will need for the preparation of the oyster steak include olive oil, sea salt, black pepper, spices, and herbs.

Shoulder Tender

Shoulder tender, also known as  `Teres Major’, is somewhat a new type of beef. It typically weighs 8-10 ounce. It is difficult for you to find it in the retail stores because you cannot obtain it in whole from the carcass.

Shoulder tender is a soft type of meat that is found in the Filet Mignon. The best methods for cooking this type of meat is by using the dry cooking methods such as grilling, broiling, and pan frying.

Ingredients you can use in cooking it include pepper, garlic, olive oil, herbs, and dry seasonings. If you love marinating your meat, you can marinate it with wines.

Merlot Cut

This part is found slightly above the shank. You will find the merlot cut in your local butchery. This cut has the same shape as the Flank Steak. Merlot cut is different from the rest of the cuts due to its tenderness. Merlot cut should be served with a glass of red wine.

Methods for cooking the Merlot cut include tenderising, boiling, pan frying, deep frying, and grilling.

Ingredients to use include mixed spices, garlic, pounded ginger, olive oil, sea salt, black pepper, and herbs and spices.

Vegas Strip Steak

Vegas Strip Steak is a newly discovered cut. The discovery was made by Tony Mata, who is a well-known meat scientist. The Vegas strip steak is found in the shoulder part of the animal. It contains cartilages, bone, fat, and connective tissue. The softness of the Vegas strip steak is the same as that of the New York steak.

Methods of cooking Vegas Strip Steak include smoking, pan frying and grilling. You can present it or serve it hand in hand with any food you like.

Ingredients you can use in cooking this cut include sea salt, dry seasoning, olive oil, and mixed spices.
